Easy (and Healthy) Fajitas!

One of my go-to meals in the summer is this one pan Fajita dish!  I’ve adapted in from an old Cooking Light recipe that my mom had in a cookbook growing up.  This is super easy.  Seriously, slice your veggies.  Cut your meat.  Season and cook.  Done.  I don’t know about you, but with all the things I’ve got going on, I need this kind of easy in my life.

Depending on what size tortillas you use, your servings may be different than listed.  I generally have medium size, so we get 4-6 fajitas with these ingredients (it’s usually closer to 6).  I use three bell peppers (I like the colors and variety of one red, one orange and one yellow), one onion (red, when I have it, but whatever you have works great!), and about 2-3 pounds of meat.  I make up a batch of my seasoning, then just keep it in a cute little jar so it’s ready when I need it!

To make, I slice my veggies and put them in a bowl.  I sprinkle with seasoning (to taste) and toss gently.  I let those guys sit while I slice my meat.  Heat your skillet to medium/medium-high heat.  Add light olive oil or vegetable oil (about 2 tablespoons).  Add your meat to the skillet and sprinkle with seasoning, to taste.  Brown your meat on all sides, then add your vegetables to the skillet.  Cook about ten minutes, or until your meat is cooked through and your vegetables are to your desired tenderness.  Before turning off your burner, squeeze fresh lime juice over your skillet and toss once!  I love fresh lime juice!!

Fresh veggies and meat of your choice (steak and chicken here) make for easy and delicious fajitas.

NOTE:  If you’re using shrimp, you probably want to cook your veggies first, since shrimp cook quickly.

We like our fajitas with cheese, sour cream and salsa, but use the ingredients you like best!!

Below is the recipe for the seasoning for fajitas.  Here’s the best part – you can use whatever ingredients you have and like!  If you have chicken, use chicken.  If you have beef, use it.  Shrimp?  Perfect!  Basically, you choose your ingredients, and season to taste.
