Spiced Holiday Pecans

It’s that time of year!!!  Let the baking commence!  If I’m being honest, being in the kitchen is always one of my favorite things, especially during the holidays…and baking has been in full swing since the beginning of fall.  But, I do kick it up an extra notch for Christmastime!  I’ve also purchased a new 9×13 pan that I’m in LOVE with!  Seriously, I’ve already used this guy 3 times in the last few weeks – I’ve made my traditional sticky buns for Thanksgiving morning, these gorgeous pecans, and some Christmas Rice Krispie treats and this pan has been the rockstar!  Best pan I’ve ever owned.  (Review below).

Growing up, we almost always kicked off post-Thanksgiving baking with these Spiced Holiday Pecans.  I don’t know if it’s because they smell great, taste like Christmas or because they’re so easy, but I can’t think of too many years when I didn’t have these guys sitting out on our table by December 1.  I love carrying on traditions, even more now as a mom.

You will need one pound of pecan halves, an egg white, sugar, ground cinnamon, group allspice and…nope, that’s it.  See, easy.  I like easy when everything else makes me crazy (happy crazy, but crazy) right now.

Preheat your oven to 300 degrees.  In a large bowl, stir to coat your pecans with the egg white.

Add in your sugar, cinnamon and allspice and stir to coat.

Dump into a 9×13 pan, preferably non-stick, and bake for about 20 minutes.  My new, absolute favorite pan – Nordic Ware Naturals Aluminum Nonstick pan is what I’ve been using for everything.  It’s well-made, bakes evenly and the nonstick coating is very effective and easy to clean – even when I bake sticky buns!  I got mine here.

Allow to sit and cool for a bit, then break up and serve in a bowl.

I eat a small handful (I mean, maybe six) a day.  Just a little taste of Christmas throughout the week – and despite the sugar, they aren’t overly sweet (which isn’t my thing).  My husband likes these, too…and that says something!
